Ste Eulalie d'Olt is situated at the foothills of the Aubrac Mountains, max. altitude 1469 m. The Aubrac countryside is rich and varied, green pastures divided by small stone walls, communal forests, lakes, exceptional flora (classified of interest by UNESCO).
The 'Burons', typical stone buildings which formerly were used for the manufacture of cheese, are scattered over this vast plateau.
The Aubrac breed of cattle is a mascot of the area. The 'Transhumance' fête is held in its honour (on around 25th May). This fête takes place when the cattle are led up to the high pastures for summer grazing. On this occasion each cow is decked out in flowers and bells and all the finery.
When you cross the Aubrac you can discover the village of Laguiole which is famous for its knives. |
